
The Pond
NOTE: This 'pop up' bar has now closed. It will next open late Spring in Sydney.
The look: In a word, eco-chic. Recycled pine seating is
joined by a nursery load of potted petunias, marigolds and conifers placed in
pre-loved terracotta.
The great outdoors: Winding its way down from the rear
deck of the former Mercat Cross Hotel to a back alley entrance, most of The Pond is alfresco (although there
doesn’t seem to be any water features).
To drink: As The Pond is a temporary
pop-up bar courtesy of Pure Blonde, it’s safe to say that PB is the signature
drink. However, there is Hoegaarden and a small selection of wines and basic
spirits if low-carb beer is not to your liking.
To eat: Wholesome-sounding tofu
burgers, brown rice balls and organic Turkish bread. If you’re sly, there’s
always potted mint or parsley for garnish.
The crowd: Suntanned early 20-somethings and marketing types
on reconnaissance.
Best for: A refreshing pit-stop before or after a trip to
the nearby Victoria Market.
